As the token Vegan at Ignite, I was naturally excited to announce MoFo (or what the prim call the Vegan Month of Food) a 30-day celebration of plant-based food!
Keep your eyes peeled on social channels for recipes, restaurant reviews, travel experiences & tips, all delightfully veggie-ful in nature under the hashtag #monthofvegan or, my personal favourite #mofo.
To kick it off, I’ve included three of my favourite vegan recipes below:
- AVOCADO CHOCOLATE MOUSSE
2 ripe avocados
½ can small can of full fat coconut milk
(at least!) 3 heaping spoons of raw (or regular) cacao
Pinch of salt
Agave to taste
Blend until smooth and chill for an hour. Serve with fresh raspberries. Yum!
- CHICKPEA PANCAKE
Take a look at this drool-worthy recipe by the talented Oh She Glows. A vegan treat packed with protein plus, it’s gluten free!
- POLENTA PIZZAS
I tried these for the first time a couple of weeks ago and let’s just say they kind of changed my life. You’d never know the dough was made without eggs! Check it out at Keepin’ It Kind.
